A good way to get closer to the cheese par excellence of the Asturian sheepfolds is to get fully involved in its artisan process; starting with attending the milking of the milk, then going through the cheese factories, and recreations of cabins and smokehouses, discovering what the maturation caves are like... to finally take a piece of this dairy jewel to our house. In the cheese factories we can buy authentic Gamonéu in different formats: personalized wedges, or complete cheeses that range between 600 grams and seven kilos in weight.

The Onís cheese factories have proposed to bring us a little closer to their star product. And they do it in the best possible way. explaining to us on the spot the excellence of the milk and the raw materials used, emphasizing traditional processes and all kinds of factors that influence its production and curing.

These may be some of the secrets that has a genuine cheese like this: the use of natural rennet, the fact that it is skimmed and salted manually, that it is smoked with wood from native forests, that it matures in immemorial caves... We feel cheese for a while, shepherds at the same time, because the explanations make us aware of how hard (and rewarding) the daily work in the ports and sheepfolds was. A way of life that cheese carries in its bowels and that it is impossible not to appreciate in its intense flavor.

The tour of this family business includes its current cheese facilities but also the replica of a traditional port hut. A well-documented guided tour in which we will learn about the entire production process, from the moment the raw milk is received until the cheese is already labeled and ready for sale.

In the cabin we are told in detail and photographic documentation, how the cheese was originally made in the flocks of the Picos de Europa, the techniques, the utensils and everything that has to do with the history of this product.

To finish off this rewarding activity, there is a small, well-explained and oriented tasting of Gamonéu.

From farm to table. The visit to these facilities begins with the milking itself and ends with the sale of the cheese in the store. In the cattle shed attached to the cheese factory we can have a unique experience, especially the little ones in the house, who will be able to see live animal husbandry and native livestock management. A cattle that lives in semi-freedom in a protected natural area and with careful care.

In about 40 minutes that the visit lasts, we will get to know the entire work environment, the ins and outs of making it, and we will end with a tasting of the highly appreciated Demués cheeses.
