100% Asturian recipe

Verdinas are very fine beans, buttery if cooked to the point. In Asturias there are in the Ardisana Valley area in Llanes.
Soft on the palate, they combine very well with seafood and game -Rabbit, wild boar… -.


We present here a recipe with prawns, but it would also be very tasty with clams, crayfish or lobster, to name a few possible combinations.
When pairing with a drink, we advise you to taste them with a sparkling natural cider, and so you have a 100% Asturian food.

Verdinas with prawns recipe for 5 people:

The cooking time is relative, because the truth is that one legume is never the same as another, nor does the cooking water have the same hardness, it will depend on our area.
As a general recommendation: we leave to soak the beans 12 hours minimum and a cooking time of about two hours and three quarters.

Ingredients:

· 500 grams green beans.
· 500 grams of prawns (fresh or frozen).
· Vegetables: 1 carrot, 1 leek, 2 cloves of garlic, 1 green pepper, 1 onion.
· I smoked with the heads and shells of the prawns, and a drizzle of virgin olive oil.
1 bay leaf.
· Sweet paprika.
· 1 tablespoon flour.
· 1 teaspoon salt.
· Virgin olive oil.
· Sparkling natural cider glass.
