What we know as pregnant boroña - characteristic of eastern Asturias - It was cooked only at the end of LentCornbread was commonly eaten, but not with this type of filling. It was a culinary feast reserved for Easter. It was presented as a main course, followed only by a hearty dessert. Top-quality pork products were chosen: chorizo, bacon, pancetta, and some recipes also include ribs. Making it isn't very difficult, but you do need to have good ingredients and some patience.
The best thing about these traditional recipes is that you can easily make them at home, with just a few ingredients that you probably have in your pantry or aren't hard to find. It's a delicious yet filling treat.
Ingredients of the boron
- 600 gr of cornmeal
- 150 gr of wheat flour
- 550 ml of lukewarm water
- Sal Island
- 3 tender sausages
- 250g bacon
- 1/2 kg of fresh pork ribs
Step-by-step recipe for boroña
1 · Preheat the oven to 180°.
2 · In a good-sized bowl, mix the corn flour, wheat flour, and salt.
3 · We make a hole in the center and add water little by little.
4. Knead until you have a soft dough. Since it doesn't contain yeast, it doesn't need to rise, but it does need to rest for about half an hour. You should end up with a smooth, soft, and manageable dough that doesn't stick to your hands.
5 · In a large, deep mold, we will distribute the dough, removing a third that will serve as a lid.
6. Line the base and sides of the pan, leaving the center free, where we'll pour the filling. Some people place cabbage leaves in the pan and then line it with the pastry.
7 · Fill with the ingredients: chopped chorizo, ribs and bacon.
8 · Cover with the reserved dough, sealing well.
9 · Let it rest for a few hours.
10 · Cover everything with aluminum foil and place in the oven for about two hours or until well cooked, at approximately 180°.
11 · If we pierce it with a toothpick/skewer and it comes out clean, the cornflour is ready.
Tips for cooking pregnant boroña
1 · Corn flour, if we have it from water mills, better.
2 · Warm water with salt, rather little.
3 · In an electric oven we can start at 200 degrees for half an hour and then lower it to 180 degrees until the cooking is complete.
