The resulting must is subjected to intense cold, reaching freezing point, and after several weeks it is defrosted and the water is subsequently eliminated by this simple physical method. The concentrated must obtained begins a fermentation that will last several months, after which 12 degrees of alcohol and a sugar concentration of more than 100 grams per litre are obtained, which can vary slightly depending on the harvest. After a little more than a year of fermentation and maturation, the product is filtered and is ready for final bottling.
It comes in 37,5 cl bottles.
Shelf life and conservation: although sufficiently ripe for immediate consumption, it evolves positively over the years. It is recommended to store in a cool place away from sunlight.
Its perfect pairing would be with fatty or mature cheeses, duck or goose foie gras, preserved, mi cûit or fresh. But above all, a slightly sweet dessert where the fruit predominates, such as apple pie, candied orange peel, mandarin, kiwi, strawberry, chocolate or nuts.
