Description

Variety of very seaworthy pates and "the jewel in the crown": the caviar of orices.
· Caviar of orices: Sea urchin roe (Paracentrotus lividus) and salt The roe is extracted manually, with great care and then packed as it is in the shell after being collected from the cliffs, rocks and sea beds of our Cantabrian Coast. They are 100% Asturian sea bites!

· Cortina Ice Cider
The process of making CORTINA Ice Cider begins with the selection of apple varieties at their optimum ripening point, which must be advanced. Once in the cider press, the apples undergo the usual selection, crushing and pressing process. The resulting must is then subjected to intense cold, reaching freezing point, and after several weeks it is defrosted and the water is subsequently eliminated by this simple physical method. The concentrated must obtained begins a fermentation that will last several months, after which 12 degrees of alcohol and a sugar concentration of more than 100 grams per litre are obtained, which can vary slightly depending on the harvest. After a little over a year of fermentation and maturation, the product is filtered and is ready for final bottling.
