The team
Behind this project are Carlos Bacallao, Josa Gallego and Carlos Gallego.

Carlos and Josa decided to leave the hustle and bustle of the city behind to find a place to live and shape their dreams. Fate brought them to this corner of the Cabranes municipality, where they found the perfect environment to make them a reality.
Alongside him, chef Carlos Gallego brings the experience and inspiration that define his cuisine. Trained in the kitchens of the Casino Gran Madrid, he was head chef at D'E Sergi Arola on Velázquez Street and later traveled to Doha, Qatar, where he opened a Mediterranean restaurant and organized events for the Qatari royal family. Today, he is the creative force behind the restaurant: with him, they experience the alchemy of flavors and the thrill of transforming local products into something unique.
