One hundred years of tradition

Estrella La Peral is a cheese from pasteurized cow's milk, straw-white in color, dairy ferments and selected noble molds that give it its characteristic bluish spots. When it is young, it is a semi-blue cheese, with a delicate flavor and a great bouquet. As the days go by, it completes its transformation into a blue cheese, acquiring all its personality, slightly spicy, but without losing an iota of its unctuousness and bouquet.

    I wouldn't say it's at the level of Cabrales, it's just different, although on the palate it's a blue cheese with a lot of strength and personality, not too strong that it encourages you to keep eating without stopping.

La Peral Cheese Factory
An artisan cheese factory, almost a hundred years old

La Peral is a family-run cheese factory founded in 1923 by Mr. Antonio León Álvarez, who has been making La Peral Cheese by hand since then -with cow's milk- and Peralzola -with sheep's milk-, both bluish cheeses, with mold. noble, and matured in a natural cellar, located under the cheese factory itself.

The cheese factory is located in the municipality of Illas, in the center of the region. Cow's milk comes from livestock farms in the area, which guarantees the quality of the raw material.
Maturation in the cellar for a period of 30 days, at a temperature of 12º with a humidity of 95%.

· Trophy «Special Grouse» of the Asturian Center of Madrid 2010.
· Gold medal at the World Cheese Awards, held in Oviedo in 2021.
